My friend Patrice Johnson is an expert on Scandinavian foods and tells me that Swedish potato balls are called Kroppkakor and are usually filled with pork. On the second day they slice them in half and fry in butter. She also says that “Some people use half raw potatoes (grated) and half cooked and their dumplings turn purple which is part of the charm, apparently.” She is truly an expert on Swedish cooking and traditions.
