Tongue Canapes? I’m not so sure about that one. I did have beef tongue while visiting in Norway once. It had an odd texture which takes some getting used to. Perhaps these are better as they are sliced thin? There is a recipe for sweetbread also on the card with tongue canapes. Be warned, sweetbread isn’t as sweet as it sounds! It’s a culinary name for thymus (throat, gullet, or neck, or pancreas). I don’t think so…maybe you are braver than I am?
